Extra thick marmalade

Made my Christmas marmalade for presents. It didn’t set probably due to 6 tablespoons Cointreau in it!

Decanted it, added two fresh lemon ice cubes and chopped ginger and cooked for another 5 minutes. Seemed a lot better. Trialing a spoonful later on, it was very thick. Will have some tomorrow, on toast to see how well it spreads.

If too thick, I will make another batch but hopefully it will be fine.

  1. It was certainly too thin to begin with.

  2. I think the addition of cointreau makes it OK even if it is a bit thick!

  3. If my marmalade is a bit runny I keep it for fruit cakes a tablespoon in the mix makes it extra tasty and stops it drying out.

    1. Love marmalade in cakes but with 6lbs, that would take forever to use. Although thicker than normal, it still spreads thankfully.

  4. I hope your marmalade spreads perfectly on your toast.

    God bless.
