Made my Christmas marmalade for presents. It didn’t set probably due to 6 tablespoons Cointreau in it!
Decanted it, added two fresh lemon ice cubes and chopped ginger and cooked for another 5 minutes. Seemed a lot better. Trialing a spoonful later on, it was very thick. Will have some tomorrow, on toast to see how well it spreads.
If too thick, I will make another batch but hopefully it will be fine.
Better too thick than too thin!

DeleteIf my marmalade is a bit runny I keep it for fruit cakes a tablespoon in the mix makes it extra tasty and stops it drying out.
ReplyDeleteLove marmalade in cakes but with 6lbs, that would take forever to use. Although thicker than normal, it still spreads thankfully.
